Duck breast confit and pulled, flavored with juniper berry and duck fat. Served with walnut toast, balsamic glaze and a seasonal salad with walnut dressing.
Paired with: Festive, bubbly Signature Cocktail "French Kiss"
Butter poached lobster tail served over fondante potatoes, chives and a creamy Nantua sauce.
Wine: Michel Picard Vouvray
Crispy pan seared sweetbread served over a creamy casserole of wild mushrooms with roasted garlic puree and finished with a thyme demi glace.
Wine: Michel Picard Beaujolais Villages
Roasted Striped Bass provencale served over vegetable, roasted young potatoes and finsihed with a beurre blance and candied rosemary.
Wine: Chateau Timberlay Bordeaux Blanc
Small bite size sweetness composed of a macaroon, chocolate truffle and coffee panacotta with a sugar cookie and little trailor.
